Galaxy Cupcakes

Ingredients

  • 1 15.25 ounce lemon cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1-3 ounce box of lemon pudding
  • Purple, pink, blue, and black food coloring gel
  • Cupcake liners
  • 1 large mixing bowl
  • 4 small bowls

Frosting Ingredients

  • 1 1/2 sticks salted butter softened
  • 3-4 cups powdered sugar
  • 3 tablespoons Hostess Twinkies Coffee Creamer
  • 1 large piping bag
  • 1 large star frosting tip
  • Galaxy Sprinkles

Instructions

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line cupcake pans with paper liners.
  • In a large bowl, combine cake mix, water, oil, eggs, and pudding mix. Beat with an electric mixer on low speed until ingredients are combined, about 30 seconds. scrape down the sides of the bowl and beat on medium speed for 2 minutes, until well combined.
  • Separate the batter evenly between the 4-mixing bowls. Add the pink food coloring to one, the blue to the another, the purple to the 3rd and the black to the 4th.
  • Pour batter into cupcake liners, alternate adding the colored batter into the muffin tin filling each about half full.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool completely before frosting.

Directions for Frosting

  • In a large bowl using a hand or stand mixer fitted with the paddle attachment, cream the butter for 2 minutes, until light and fluffy.
  • Slowly mix in the powdered sugar, 1 cup at a time, while alternating 1 tablespoon of the coffee creamer. Continue to mix until creamy and stiff peaks form.
  • Add the frosting to the prepared piping bag.
  • Frost your cupcakes and garnish with the galaxy sprinkles if desired and enjoy!

Notes

    • If you don't have any food coloring gel, you can use regular food coloring, but the colors won't be as vibrant.
    • The recipe makes enough frosting to generously frost 24 cupcakes. If you want a lighter frosting, you can halve the recipe.
    • These cupcakes are best eaten the same day they are made. However, they can be stored in an airtight container at room temperature for up to 3 days.
    • If you want to make these cupcakes ahead of time, you can bake the cupcakes and freeze them. Then, make the frosting and store it in the refrigerator until you're ready to decorate. (do not freeze them once your had frosted them)
