Strawberry No Bake Cheesecake

Ingredients

For the Crust

  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons sugar

For the Filling

  • 16 oz 2 packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, whipped to stiff peaks
  • 1 cup fresh strawberries, pureed

For the Topping

  • 1 cup fresh strawberries, sliced
  • Optional: whipped cream, mint leaves, or strawberry sauce for garnish

Instructions

Prepare the Crust

  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until evenly moistened.
  • Press the mixture firmly into the bottom of a 9-inch springform pan. Use the back of a spoon to level it out. Refrigerate while you prepare the filling.

Make the Filling

  • In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Gently fold in the whipped cream until well combined.
  • Add the strawberry puree and mix until the filling is evenly pink and infused with strawberry flavor.

Assemble the Cheesecake

  • Pour the filling over the chilled crust and spread it evenly with a spatula.
  • Cover the pan with plastic wrap and refrigerate for at least 6 hours or overnight for the best texture.

Add the Toppings

  • Before serving, arrange sliced strawberries on top of the cheesecake. Add optional garnishes like whipped cream or a drizzle of strawberry sauce for extra flair.
  • Carefully release the cheesecake from the springform pan, slice, and enjoy!
