Raspberry Mojito Mocktail

Ingredients

  • ¾ cup raspberries and a few extra for garnish if you’re feeling fancy
  • ½ of a lemon sliced (though if you’re in a lime mood, that works beautifully too!)
  • 1 can sparkling water or a light-colored soda think lemon-lime or ginger ale if you like a bit of sweetness
  • 5-7 fresh mint leaves a sprig or two extra for garnish always feels a little extra special
  • Ice optional, but I love a cold drink with a nice crunch of ice

Instructions

  • Grab a jug or a sturdy glass and toss in your fresh raspberries, mint leaves, and lemon slices.
  • Take a muddle (or the back of a wooden spoon if you don’t have one) and gently crush everything together. The idea here is to break up the fruit and mint leaves just enough to release their natural juices and flavors. You’re looking for a bit of juice mingling at the bottom and a heavenly aroma wafting up.
  • Once you’ve got your muddled magic in the jug, go ahead and pour in your sparkling water or soda. Give it a gentle stir – you’ll want everything to swirl together without losing those delightful bubbles.
  • Optional but recommended – toss in a handful of ice for that chilled, refreshing vibe.
  • Top it off with a few extra raspberries, a sprig of mint, and a lemon slice for a little pizzazz.
  • Enjoy every sip.

Notes

1. Lemon or Lime?

Both work wonderfully here! Lemon gives it a slightly sweeter, more mellow taste, while lime packs a sharper, tangier punch. I like switching it up depending on my mood (or what’s left in the fridge after the kids raid it!).

2. Add More Berries for a Twist

If you want to mix things up, add a handful of strawberries or even blueberries. The combination of berries can create a lovely balance of sweet and tart. Just remember to adjust the muddling time if you’re working with thicker berries – they might need a little extra elbow grease!

3. Soda or Sparkling Water?

If you’re looking for a lighter drink with zero added sugars, go for sparkling water. It keeps things crisp and refreshing. But if you’re in the mood for a bit of extra sweetness (no judgment here!), a lightly flavored soda like lemon-lime can add a nice touch. This is also a fun way to make it kid-friendly if you want to make them feel like they’re drinking something special too.

4. Mint Leaves – Fresh is Best

Fresh mint is key for that cooling, minty flavor. Give the leaves a little slap between your hands before adding them in – it helps release those oils for an extra punch of flavor.
